VICKY HOUSTON

Prior to working at Kelly's Kitchen, Vicky was an office manager in a corporate environment. 

Vicky and her daughter, Eva started a program called Plant One More back in 2017. They would collect fresh produce donated by community members and donate it to a local shelter.  The program only lasted a few years, but instilled a love of helping out with food insecurity.

In her spare time Vicky enjoys reading, painting, gardening and walking her standard poodle, Avett.

ACCESSIBILITY CONSULTANT WITH NEIGHBORHOOD ACCESS

JULES GOOD

(They/Them)

Founder and consulting lead at Neighborhood Access. Jules is a multiply-disabled, queer community builder with a passion for leveraging design, collaboration, and talent to create more accessible communities. They hold a Master in Public Policy from the University of New Hampshire and are a Certified Professional in Accessibility Core Competencies accredited through the IAAP.

Jules has served as a member of the White House Office of Public Engagement Disability Advisory Council, as well as a member of the Fair Fight Action Disability Council. They have worked in advocacy, assistive technology, policy, and consulting, and use these experiences to inform their work.

Kelly Timmons

For ten years Kelly owned and operated a food manufacturing company where she brought over thirty different brandlines to hundreds of retail locations. Food sovereignty and security are deeply connected to Kelly’s Southern, Lowcountry heritage.

In 2016, she founded Kelly’s Kitchen to continue to focus on the intersectionality of food insecurity.

OPERATIONS DIRECTOR

Rachel Kaplan, MPH

Rachel Kaplan is a consultant with her own company. She places emphasis on program management, program creation, grant applications and reporting, and creating inclusive and accessible content for organizations to ensure people with disabilities are not an afterthought when it comes to community access and engagement.

Donna Valente

(she/her)

Chef Donna Valente learned how to cook and bake side by side seasoned family and friends since she was a little girl. After a disability nonprofit career spanning three decades, she began caregiving full time for family members, focusing on cooking healthy delicious fresh food. She specializes in dairy-free cooking, and enjoys making vegan food and baking gluten free treats.

Donna lives in northern New Jersey with her human and canine family. In addition to sharing her passion for healthy cooking with Kelly’s Kitchen, Donna’s podcast Giving Heart Beat highlights nonprofit founders and other superheroes from around the world. When she’s not in the kitchen, Donna is most likely outside tie dyeing fabulous fashion.

DIETARY EDUCATION AND DISABILITY CONTRIBUTOR

SUSANNAH SCARONI

(she/her)

Susannah Scaroni is a 3 time Paralympic wheelchair racer who is also a registered dietitian. She combines her passion for nutrition with her experience as a para athlete to help promote healthy eating and lifestyle choices to a variety of individuals. She has a deep desire to assist people with disabilities, in particular, gain the knowledge and skills that will empower them to achieve their health goals.

Eva Houston

(she/her)

Eva graduated from the University of Illinois where she received her Bachelors of Science in Natural Resources and Environmental Science and studied food systems. As a wheelchair user, Eva enjoys being an advocate for the disability community while making a difference in the national food system. 

Eva is a member of the Paralympic Track and Field National Team and competed in the 2020 Tokyo Paralympic Games. In her free time she enjoys listening to podcasts, writing, and drinking lots and lots of coffee.

KITCHEN ACCESSIBILITY CONTRIBUTOR


Jenny Border

(she/her)

Jenny Border is a fierce advocate that every individual at any ability level has the right to education and the necessary resources to live a successful life.

Outside of advocating for the variety of resources needed for the disabled community to live a successful life, Jenny loves to keep herself busy by tinkering. Her tinkering typically consists of researching and experimenting with different ideas on her own wheelchair or in her apartment to help her be even more independent.
